I'm going to tell you right off the bat, these are DANGEROUS! I'm warning you that if you make these you will need to find them a new home right away. Keeping them in your fridge will only make you sneak a piece after every meal. Even breakfast. Don't say I didn't warn you!
I didn't know there could be such a delicious combination of oreos and chewy brownie and melted chocolate and peanut butter and Oreo crumbs (did I mention that?). I really like that its cold. Its freaking amazing! :) Danger #2- you will not get rid of an entire package of oreos with this recipe. You will have to make it twice.... I hope you have a bake sale or something, for your own sanity!
Triple Layer Cookies & Cream Crunch Brownie Bars
Recipe from How Sweet It Is
- 1/2 cup unsalted butter (1 stick)
- 1 1/2 cups sugar
- 2 eggs
- 2 tsp vanilla extract
- 1 1/4 cups all purpose flour
- 1/4 tsp salt
- 3 TBSP cocoa powder
- 2 cups (1 bag) chocolate chips (I used milk chocolate)
- 1/2 cup creamy peanut butter
- 20 oreos (I used reduced fat to make myself feel better...)
Preheat oven to 350. Butter and flour an 8x8 pan. Using an electric mixer, beat butter, sugar and vanilla until fluffy.
Add eggs one at a time until well combined.
Scrape down bowl. Add in cocoa powder and mix until combined.
Turn speed to low and add flour and salt until batter comes together. Stir in 1/2 cup chocolate chips by hand.
Spread batter into pan and smooth top. Gently press 9 oreos into the batter like so.
Resist the urge to pluck out of pan and eat. Bake 25-30 minutes. While baking, put remaining oreos in a large plastic bag and crush with rolling pin. When brownies are finished baking, remove and sprinkle with 1/2 cup chocolate chips and crushed Oreos. Return to oven for 3 minutes. During this time, melt remaining chocolate chips and peanut butter in the microwave. Stir together. Remove brownies from oven and pour melted chocolate mixture over top. Using a small spatula, spread the chocolate evenly, making sure to press it down between the crumbs. This is the "glue" that will hold the layers together. I did not do this well enough the first time I made these and top layer came off while I was eating it.
Refrigerate 2 hours before serving. This is really important so that the layers can set. If you are in a hurry, you can put it in the freezer. I keep mine in the fridge since the milk chocolate gets melted easily.
