Say what? Say yes! I had a mad dessert craving the other night and did not need/want to bake an entire cake. I had heard of this before, so I did a little googling and less than 10 minutes later I had already over-indulged. :) Amazing, eh? This recipe could use a little tweaking, and there are so many variations out there, but I did not have time for that. Next time I would sub melted butter for the oil, and maybe cook a little less to make it more "lava" like. YUM! Can't really beat a cake in 2 minutes though!
2 Minute Chocolate Mug Cake
Makes 1 cake (enough for 2, or 1 really big craving)
- 4 TBSP flour
- 4 TBSP sugar
- 2 TBSP cocoa powder
- pinch of salt
- 3 TBSP milk
- 3 TBSP oil (or melted butter)
- 1 egg
- splash vanilla
Take a coffee mug and spray with non-stick cooking spray. In a small bowl, mix together dry ingredients.
In another bowl, mix together milk, oil and egg gently with a fork until combined. Add dry ingredients and vanilla until well-combined. Add chocolate chips.
Pour into mug. Microwave on high for 1-2 minutes- you need to watch it. The top will rise over the mug- that's OK! Just make sure it doesn't spill over.
Remove and tip upside down into bowl. Add ice cream and enjoy your personal chocolate cake! :) Next time I might add some Reese's- just because I'm obsessed with them lately!
